Tuo Cha (“bowl” tea) are tiny tea “bowls” or cakes of Pu-erh tea. Pu-erh is true black (cooked) tea. The “cooking” process often involves a special aging process whereby the tea is stored in special caves or climate-controlled rooms. This aging technique is applied during and after the tea undergoes a “composting” procedure whereby helpful bacteria growth is encouraged through a process involving the introduction of moisture to drying piles of tea leaves that are regularly turned and tended. This painstaking process results in Pu-erh’s wonderfully distinct flavor and bouquet! Like a fine wine or scotch, Pu-erh is considered a sophisticated tea.
