Butterfly Pea flower, now commonly known as blue tea, has been enjoyed as a tisane in Southeast Asia for centuries for its health benefits and has only recently gained more widespread popularity. This is likely due in no small part to the entrancing color changes that occur as you drink it. These range from light blue to a deep dark blue to purple and even to a dark violet at times, depending on the steep time and ph of the water. The plant is also known by its scientific name, Clitoria Ternatea, and is identifiable by its striking blue flowers. It is used for a host of medicinal benefits in Ayurvedic medicine, where it is called "Aprajita" and has been said to be a plant flowering "towards immortality." Locals commonly add lemon juice and honey when enjoying this beautiful blue butterfly pea flower tea!
