Kukicha, also known as “twig tea,” is made with the stems of leaves accumulated from the process of making sencha tea. One of the commonest Japanese teas, kukicha has a deep green color and an exquisite, fresh aroma and taste that are sweeter and lighter than Sencha. Kukicha is also delicious when served cold during the summer months. When preparing the tea to be served cold, add double the amount of tea for steeping.
